Berlin offers countless places where you can enjoy seasonal specialties in winter – from the glowing Christmas markets to the cosy cafés serving traditional treats. But what would winter – and even more so the Christmas season – be without baking together at home in the warmth? It may still be November, but December will be here before you know it. So before you venture into the big Christmas menu, why not try out this special recipe that we want to share with you today? It’s not just a classic Austrian-style apple strudel, but a sophisticated reinterpretation with an Italian twist – created by a renowned chef. Read on to find out step by step how to make this delicious recipe yourself!

Preparation: You will need these ingredients for 8 portions
For the dough
- 4 ½ ounces flour
- ¼ cup water
- ½ ounce melted butter
- 1 whole egg
- ½ teaspoon salt
For the filling
- 1 ½ pounds golden apples (washed and cleaned)
- 2 ½ ounces sugar
- 2 ounces butter
- Zest of 2 oranges
- 1 ounce rum
- 1 ounce toasted pine nuts
- 2 ounces raisins
- ½ teaspoon cinnamon powder

Preparation
For the dough:
Place the water, flour, melted butter, a pinch of salt and the egg in a bowl and knead everything together well. The dough should be nice and soft – if it is too firm, simply add a little more water. Once the dough has completely absorbed the liquid, leave it to rest in a warm place for about 30 minutes.
For the filling:
Cut the apples into thin slices using a mandoline or a very sharp knife. Then marinate them for 20-30 minutes with orange zest, raisins, pine nuts, rum, cinnamon and sugar.
Let’s move on:
Now it’s the dough’s turn again. Roll it out very thinly and brush it generously with melted butter. Then spread the apple filling evenly on top. Using a damp kitchen towel, carefully roll up the strudel, seal the ends well and then leave it to rest in the fridge for 30 minutes so that everything is nice and firm.
Off to the oven:
Before baking the strudel, brush it again with melted butter. Then put it in the oven at 175 °C (350 °F) for around 25-30 minutes. You can brush it with butter once or twice during baking to give it that wonderful golden brown color.
And voilà!
Leave the strudel to cool slightly and then dust it with powdered sugar, grated orange zest and a pinch of cinnamon. Your juicy treat is ready – crispy on the outside, fruity and fragrant on the inside!
